Easy & Refreshing Summer Recipes
Summer is here in full swing, and May brings with it bright days, warm breezes, and the juicy goodness of mango season! It’s the perfect time to shift towards lighter, cooler meals that are easy to prepare and kind to our bodies. That’s exactly why I put together this 31-day meal plan packed with easy, refreshing summer recipes for breakfast, lunch, snacks, and dinner. No complicated steps, no heavy cooking — just simple ideas that help you enjoy the season while staying energized and refreshed.
When the temperatures rise, it’s important to choose meals that feel light yet nourishing. Breakfasts like smoothies, overnight oats, chia puddings, and avocado toast are wonderful to kickstart the day. They’re cooling, quick to make, and full of natural energy. For lunch, colorful salads, chaats, light pulaos, and wraps take center stage. They not only satisfy your appetite but also keep you feeling light and comfortable throughout the afternoon. Evening snacks are all about fresh fruits, yogurt bowls, roasted nuts, and easy chaats, while dinners are kept simple with stir-fries, grilled dishes, and comforting bowls of dal or quick curries with seasonal vegetables.
31-Day May Meal Plan

A big highlight of this season is undoubtedly mangoes. In this meal plan, I’ve tried to weave in mangoes wherever possible — think mango smoothies, mango chia pudding, mango salads, and even mango chicken curry! Mangoes bring natural sweetness, a burst of flavor, and so much cheer to our plates. They’re not just a fruit; they’re a celebration of summer. Enjoy them raw, toss them into salads, blend them into drinks, or even pair them with savory dishes for a delicious balance.
Staying hydrated is also crucial during summer. Along with meals, make it a point to consciously sip water throughout the day. You can infuse your water with mint, lemon, cucumber, or berries to make it more refreshing. Coconut water, buttermilk (chaas), fresh lime juice, and homemade iced herbal teas are excellent additions to your summer routine. Including water-rich foods like cucumbers, melons, oranges, and of course, mangoes, in your daily meals helps your body naturally stay cool and hydrated.
This 31-day plan is designed to celebrate all that summer offers — lighter meals, seasonal fruits, bright flavors, and the joy of simple cooking. It’s about slowing down, enjoying fresh food, and keeping ourselves nourished without spending too much time in the kitchen. So let’s make May delicious, refreshing, and full of sunshine, one easy meal at a time!
