Healthy food is always what mom’s look out for their kids….Today when I was waiting to pick up Lil’M from her school…I heard group of mom’s were talking about healthy snacks and what to give the kids in the lunch box….I automatically got involved in the conversation and one mom was taking about nuts and other was talking about fruits, etc….One of the mom from the group who has just moved in from Bangalore and she is finding hard to stand in the kitchen beating the humid climate of Chennai told us how she is down the cooler route with these deliciously simple little treats from the fridge to entertain her guests and kids at times….She was so generous to tell the recipes in easy way….as upon hearing the chocolate my ears got sharp…..you know my craving for chocolate….before I forget them let me share with you all….
Chilled chocolate pudding For a silky chocolate pudding that melts in the mouth, you’ll only need five ingredients, most of which are probably languishing around your cupboard. Mix together half a cup of sugar, one third of a cup of cocoa and three tablespoons of corn starch. Then, gradually add two cups of milk, whipping to combine. Sling in the microwave for three minutes, stirring every minute, and dash in some vanilla essence in the
last minute. Finally, chill in the refrigerator until cold, and garnish with a whirl of whipped cream and sprinkles just before serving.

Chocolate-dipped bananas These nifty little treats can be conjured up in a hurry, and will delight little ones who are too busy running around in the sun to sit down and use a spoon. Peel and slice bananas in half, carefully insert a popsicle stick, then freeze for around three hours. Melt some dark chocolate, swirl your frozen bananas until coated, and roll in crushed peanuts for a crunchy topping. Serve immediately: you won’t get any peace unless you do!
Teeny weeny key lime pies This layered dessert is perfect for a buffet or as the star dish of an assiette. For the curd, combine one cup of lime juice, two sticks of butter and two cups of sugar in a pan until the butter is melted. Beat 14 eggs and add to the mixture. Simmer until it’s creamy. If this sounds like work, buy some ready made lime curd. They’ll never know the difference! Whizz sugar and sweet crackers in a food processor with some butter for the crust and press into the bottom of a serving bowl with the back of a chilled spoon. Lavish with the curd, then swirl with whipped cream and a sprinkling of lime zest.

Now waiting for these treats to try in my kitchen…..When they asked me…what I give to Lil’M after school I told them…that I give sandwiches, milk, fruit pops, cake loaded with fruits and nuts, boiled egg, etc…..Sandwiches was something which caught their attention and whole topic changed and landed to sandwiches. When I told them about different sandwiches I regularly make at home…they were quite surprised and one sandwich recipe which caught their attention was this…Grilled Chocolate-Banana Sandwich….
Grilled Chocolate Banana Sandwiches
INGREDIENTS:
- 4 Whole bread slices
- 2 tbsp. melted Butter
- 3-4 tbsp. Dark Chocolate, grated
- 1 Banana, peeled and sliced into rounds
PREPARATION:
- Keep the grill plates in the sandwich maker and heat it as per instructions in the manual.
- Spread whole wheat bread slices on a plate and top them with sliced banana pieces followed by grated dark chocolate and then top with another bread slice and brush with melted butter.
- Keep the butter side bread slice towards down on the grill plates and brush butter on other side.
- Close the sandwich maker and wait for 2-3 minutes until you get crispy grilled sandwich.
- Serve warm with lots of love.
NOTES:
- You can use chocolate chips or Nutella also works good in this recipe.
- Depending on the brand and watts the time to get crisp sandwich may vary. So keep an eye on your sandwich.
