{Ramadan Special} – Guest Post: Spring Rolls from Febina of Febi’s Cookbook

Hi to all lovely readers… I am extremely happy that I was invited by Lubna to do a guest post on her blog where really rocking bloggers have already done their contribution and in a way I am feeling proud to be among them, even if I am not up to their mark… I am new into blogging and just started with my blog journey 2- 3 months back and since then what I enjoy most is meeting new blogger friends more than cooking and picturing it… and for Lubna, when she asked me to do a guest post, I was really excited and agreed to do the post… But I was so busy with Ramadan that I couldn’t squeeze out some time from my schedule in sending her my entry.
This time Ramadan is a very special one for me as whole of my family are with me in U.A.E and therefore I feel so happy despite of the scorching heat and long hours of fasting. Ramadan brings in taqwa and we spend most of our time offering prayers and reciting Qur’an. Fasting is not only for our belly but also for our soul. It is something to cleanse our soul from the impurities of sins we have done in a year. We stay away from all kind of wrong deeds on behalf of the purity and holiness of this month and is expected to continue the same way for the coming years..
Coming to the recipe, spring rolls are very popular iftar snack among my family… and we all enjoy it because of its crunchy outside and juicy inside… I love it to be served hot… Whenever we plan an Iftaar get-together we make sure this snack is included in our menu….
- Chicken boneless- 250 gms(boiled with some turmeric powder and salt and shredded to fine pieces)
- Onion- 2 finely chopped
- Ginger garlic paste- 2 tsp
- Green chilly- 2
- Turmeric powder- ¼ tsp
- Garam masala powder- ½ tsp
- Coriander leaves- ¼ cup
- Curry leaves- a stem
- Ghee – 2 tbsp
- Salt- to taste
FOR PAN CAKES:
- All purpose flour- 1 cup
- Egg-1
- Salt to taste
- Water enough to make a medium thick batter
FOR COATING:
- Heat ghee in a pan, add curry leaves and onion and saute till golden brown. Add ginger garlic paste and green chilly and saute well. Add turmeric powder, garam masala powder and salt. Add coriander leaves and shredded chicken. Mix well and keep aside.
- Make batter for the pan cakes from given ingredients. Heat a frying pan or tawa, pour a small laddle of batter to make small pancakes about 10 cm diameter.
- When cooked( no need to flip over the pan cakes), take off from pan and place a tablespoon of filling in the center length wise.
- Fold from 2 sides over the filling and roll from the third side towards the opposite to make a roll. Repeat the process with remaining batter.
- Make a mixture of beaten egg and milk. Add salt and pepper if u want. And dip the rolls in the egg mixture and coat it in bread crumbs. In a frying pan, heat oil enough for shallow frying the rolls.
- Fry the rolls from all sides to golden brown colour. Serve hot with your favourite dips or tomato ketchup.
