– 2 tbsp. chopped candied orange peel – 2 tbsp. chopped candied lemon peel – 1 ⅓ cups light raisins – ⅔ cup dark raisins / sultanas – ⅓ cup dried cranberries – ⅔ cup blanched almonds – 1 cup walnuts – 1 ½ cups sifted all-purpose flour – ½ tsp. all spice powder – ¼ tsp. baking soda

Step 1: Pre-heat The Oven & Grease the Loaf Tin Step 2: Make all spice powder.

Step 3: Toss the nuts and peels in flour. Step 4: Sift the dry ingredients.

Step 5: Prepare the batter by combining flour-spices mixture by beating only until just combined. Add the fruit-nut mixture into the batter and mix.

Step 6: Turn the batter into the greased baking tin and smoothen the surface to even out. Arrange walnut halves on the batter in a pattern, if desired.

Bake for about 1 hour till a skewer inserted in the center of the cake comes out clean. Turn out and transfer on to a baking rack to cool completely.
