– Choose firm and green raw mangoes for pickling. Wash the mangoes thoroughly and using a clean cotton cloth wipe the mangoes completely dry. Always slice the mangoes through the center from top to bottom Remove the stone but retain the stone wall.
– Mix all the ingredients. If your making this for the first time, then wear glove and mix the ingredients. My friend says pickle has to be mixed with a clean and dry hands only.
– Add generous amount of oil . Combine well. Mostly groundnut | peanut oil or seasame oil is used in making Andhra pickles. You can use sunflower or rice bran oil too.
– Trasnfer the contents into a clean and dry ceramic jar or tupperware box. Tight it with a cloth or lid and place it in a clean, dark and dry corner of the kitchen for 3-4 days.
